Fall Food for You! Calico Beans

Don’t you think the gorgeous crispiness and sweateryness and family-holiday energyness of Fall calls for the comfort of soup? Or stew? Or something hot from the crockpot? I do. And that is why I am going to post one of my favorite summer-transition-to-Fall recipes. Also, I got sort of weirded out that I was posting about such bizarre things as deep ocean dork fish, tree poetry, being a castle, and bad limericks accompanying pictures of Ireland.  Something is wrong with my mind. Clearly, it is time for comfort food. Et voilá! Calico Bean soup. Do enjoy. It is mighty lovely with grilled chicken.

Calico Beans
INGREDIENTS:
1 can each: red beans, kidney beans, black beans, white beans, small lima beans, drained
1 can pork & beans
1 lb ground beef, browned with half a chopped onion
1/2 lb bacon, cooked until crisp and chopped
1/2 cup ketchup
3/4 cup brown sugar
2 tsp. vinegar
1 tsp dry mustard
1 clove garlic, minced. Or 1/4 tsp garlic powder

PREPARATION:
Stir everything up. Pour into crockpot. Unless you were smart and just threw it all into the crockpot in the first place, thereby saving yourself the Pour Into Crockpot step. If so, just stir everything in the crockpot. 

Cook on low for 8 hours. Or 6 hours. Or however long your crockpot takes to heat it all and combine the flavors without turning it into a homogenous mess. 

This is trés wonderful. Trust me. Even if you tried that peach bar recipe I posted a few weeks ago and found it to be ridiculously dry and crumbly so you added an extra egg and then it came out too moist. You won’t run into that here. And anyway, the peach thing was still tasty, wasn’t it?
